Welcome to Nobu's Japanese Restaurant- your home for fresh authentic sushi. The owner and sushi chef Mr. Noboru Kidera, earned his sushi chef certificate in Japan and worked as a sushi chef at the Tokyo Fukuske Sushi Restaurant for 7 years before working as a top sushi chef at the Hyatt Regency Waikiki Beach Resort and Spa from 1972 to 1983. Mr. and Mrs. Kidera opened Nobu's Japanese Restaurant in St. Louis on Delmar in 1987 and moved to their current location (8643 Olive Blvd, St. Louis, MO 63132) in 1991. Since then, Nobu's has won the People's Choice Award for Best Sushi by RFT for more than 10 times (1991-2001, 2007, 2010), been voted Citysearch's Best Sushi and Japanese restaurant in 2000 and awarded Sauce Magazine Reader's Choice Favorite Japanese/Sushi in 2012.
Nobu's specializes in fresh sashimi, and certain fish are flown in directly from Japan, such as Amber Jack (Kanpachi), Horse Mackerel (Aji), Japanese Red Snapper (Tai), and Traveler (Shimaaji). We never use frozen fillets! We prepare our sushi only from live fish and clams delivered by a Chicago supplier 3-4 times a week. If we don't receive live fish, we won't serve it in our restaurant.
